The Executive Chef, Full Service, provides strategic direction to the day-to-day culinary operation of all Resort year-round and seasonal Restaurant operations. The Executive Chef, Full Service, will work closely and in tandem with the Executive Chef, Quick Service and Banquets.

WHAT WILL I BE DOING?

  • Managing all aspects of employee engagement within the kitchens, including recruitment, onboarding, training, performance management and reviews, ongoing employee development and safe kitchen operations.
  • Maintaining a positive & professional approach with peers and employees, actively encouraging a positive environment for continuous improvement.
  • Planning, directing, and supervising the food preparation and cooking activities of multiple kitchens.
  • Menu & Recipe development across multiple business units including 2 year-round full-service restaurants, and 3 seasonal full service restaurants.
  • Responsible for all aspects of food safety and quality, ensuring standardized recipes to ensure consistency.
  • Coordinating planning and purchasing of food supplies in collaboration with our resort Purchasing team.
  • Project management as related to the culinary experience.
  • Preparing & executing departmental budgets with regards to labour planning, operating expenses & capital expenditures.

WHAT DO WE NEED FROM YOU?

  • Red Seal certification
  • A minimum of 10 years culinary experience with at least 5 years in a Sous-Chef capacity
  • Experience in full service multi-unit restaurant operations.
  • Strong knowledge and understanding of all aspects of the kitchen.
  • Must be an effective leader, manager, trainer, coach, and administrator with excellent organizational abilities and excellent interpersonal and communication skills.
  • Must be an inspiring communicator and teacher and foster an environment of learning and excellence.
