Job Description:Description: We are looking for a responsible kitchen lead for overseeing the daily operations of a kitchen, ensuring that all food preparation and service meet quality standards. This person must also have experience working with pizza. Responsibilities: Oversee and manage all areas of the HOH and make final decisions on matters of importance. Use expertise in classic and contemporary culinary techniques and flavor profiles to lead menu creation for innovative cuisine menus. Adhere to company standards and service levels to increase sales and minimize costs, including food, small wares, and labor costs. Estimate food needs, place orders with distributors and schedule the delivery of supplies. All met within the budget set forth by Honeycomb hospitality. Lead recruiting, interviewing, and training for all new kitchen staff. Prepare meals and ensure that dishes meet the highest quality standards. Attend weekly management meetings as deemed by Honeycomb hospitality and conduct weekly leadership meetings and action plans for the HOH leadership team. Estimate and plan for food sourcing requirements, as well as estimate and budget for food and labour costs within or under budget. Arrange for the purchase of specialty culinary equipment as well as arrange for repairs if necessary within budget. Build weekly team members schedule within budget as provided by the Director of Operations. Maintain professional restaurant image including restaurant cleanliness and appearance standards. Be fully in compliance with all Ontario health standards in the kitchen area. Responsible for ensuring consistent high quality of food preparation and service. Ensure positive guest service in all areas. Respond to complaints, taking any and all appropriate action to turn dissatisfied guests into return guests. Ensure proper security procedures are in place to protect employees, guests and company assets. Provide direction to employees regarding operational and procedural issues. Hiring and training of all HOH staff, to standards and practices of Honeycomb hospitality. Leading and training and development for FOH food knowledge through effective food orientations. Inventory management which will include but not limited to; invoice processing, weekly variance action plans, direct liaison with honeycomb hospitality, negotiate product pricing, review, troubleshoot, and sign off on all weekly counts. Labour, which will include but not be limited to: Costing schedules to meet budgeted labour for the period, costing all departments to feasible formula. Reviewing and action planning out cost saving opportunities for the business. Menu items: Responsible for final costing and costing adherence, savings recommendations for both units, yield and cost changing updates. Training & On Boarding: Up keep and adherence of all training materials and on boarding documents for the HOH. Recipe books, training pics and sign off on all new staff. Testing and reviews of all staff in the HOH. Sous Team: Recommendations and progress of all Sous chef team. Adherence of delegation of duties, discipline and performance reviews of sous team. R&M: upkeep and cleanliness of all equipment and appliances.
